Hand-harvested, gently pressed. Cold settling for 24 to 48 hours. Alcoholic fermentation in vats at 18 & 20°C for part of the wine, and in barrels for another part, with racking during fermentation. Malolactic fermentation in wood for 90% of the volume. Maturation in stainless steel tanks for part of the wine, then in 400L barrels for the remainder (25% new, 25% 1-wine and 25% 2-wine) on fine lees for 8 months. Regular stirring of the lees. |
