The estate and the wine
The estate and the wine Romain Bouchard is a young winemaker. He has been established since 2005 on the 3.38 hectares of the Domaine de la Grande Chaume in the Chablis and Chablis Premier Cru appellations. In the process of converting to organic farming since 2007 (Ecocert), he practices vinification with minimum intervention and unhurried aging. He is definitely a rising star in Chablis.
Wine The Chablis Premier Cru Vau de Vey 2008 is vinified by Romain Bouchard at his domaine de la Grande Chaume estate. The location of Vaux de Vey is ideal. Sitting on Kimmeridgian limestone, on the the finest Chablis' favourite terroir. This vintage is marked by a superb conjunction between fat and chalky minerality. It is a great achievement with rich, meaty texture.
Vinification Hand harvested, pressing of whole bunches, running off of the juice by gravity, 18 hours static settling of the juice, fermentation without addition of exogenous yeasts in stainless steel vat (70%) at 19°C and in French oak casks (30%) in underground cellars. Aging on fine lees for 11 months with occasional pumping over and stirring of the lees.
