Hand harvested. Gentle vinification with extraction at the start of fermentation, punching down of the cap adapted to the characteristics of each plot, maceration with the cap submerged in wooden vats. Malolactic fermentation completed before Christmas. Aged for 20 months in 100% new oak barrels. |
