The estate and the wine At the pinnacle of the Jura, awarded 3 stars by the RVF Guide, Domaine Macle cultivates excellence with unparalleled consistency, delivering vintage after vintage wines of sumptuous precision, now certified organic.

Laurent Macle and his sister Christelle continue their father's work with devotion. The 12 hectares entirely devoted to Château-Chalon serve the cause of judiciously managed oxidation, without ever overdoing it. In recent vintages, "ouillés" wines (without oxidative style) have also appeared, of a comparable level of excellence. These are mythical and legendary wines, built for eternity, which remain difficult to access due to limited volumes.
Wine The 2018 white Côtes du Jura Chardonnay Sous Voile has aged for three years in barrels under oxidative conditions - like Vin Jaune - to deliver an intense and elegant body, with fresh notes and ripe fruit. It's a perfect blend of smoky and smoldering flavors, curry, saline tension, and power. With remarkable balance, it serves as a wonderful introduction to veil wine for all enthusiasts. Sumptuous with creamed fish or poultry curry. It will easily keep for fifteen years.
Vinification Harvested by hand. Total destemming, alcoholic and malolactic fermentations in vats. Aged for almost 3 years in 228-liter oak barrels, under natural yeast veil.

The estate began its conversion to organic farming in 2015 and achieved full organic certification with the 2019 vintage.
