Sourced from old vines, some over 60 years old, the 2021 white Chablis 1er Cru Vaillon presents a very digestible profile, with notes of white fruits and an extremely discreet aging process. Energetic and tense, it offers beautiful persistence, but also a very pleasant fruitiness, with perfect maturity. A very fine wine with an impressive potential of 15 years and beyond. |

Harvested by hand. 5 parcels totaling 3.8 ha, with vines ranging in age from 38 to 74 years, south, southeast exposure. Pneumatic pressing, cold settling and fermentation at around 20°C. Native yeasts. Vinification and ageing 55% in temperature-controlled stainless-steel vats and 45% in barrels (of which 5% are new and the rest 2, 3 and 4 wines) for 8 months, then blending for 2 to 4 months in vats before bottling.
