The 2021 red IGT Toscana Masseto comes from a small, clay-rich hillside, home to 7 hectares of Merlot, cultivated exclusively by hand. This pure Merlot vintage—a return to its roots without Cabernet Franc—offers a powerful wine that stays true to the estate’s style, shaped by extended aging in oak. Hand harvested in 15kg crates. The grapes are sorted and destemmed by hand. Each plot is vinified separately. Fermentation takes place in steel and wooden vats, followed by a maceration period of 21 to 28 days at a temperature of between 25 and 28°C. Next comes malolactic fermentation in 100% new oak barrels, after which the batches are separated for 12 months of maturation. The wine is then blended and returned to the barrels for a further year, for a total of 24 months. After bottling, the wine is aged for a further 12 months. |
