Wine The 2021 White Santorini Nassitis captures the essence of the Mediterranean, dry and nuanced, with a striking mineral character and a subtle smoky note. This energetic and distinctive wine, born from volcanic soils, offers a finely structured, elongated profile with exceptional freshness, finishing with delicate bitterness. A favorite of Best Sommelier in the World, Olivier Poussier, and rated 92/100.
Vinification Harvested by hand. Each grape variety is vinified separately. Whole bunches are pressed and fermented in stainless steel vats. The grape varieties are blended and then matured in stainless steel vats.
