The 2004 Jacquesson Aÿ Vauzelle Terme DT is based on the original wine, with a late disgorgement (D.T.) of 16 years on laths instead of 8, to refine it even further. The aim is to give the wine a natural patina, all patiently aged in the Jacquesson cellars. The ripeness of the grapes and the balance of the wine are exemplary, the result of a quest for perfection. No other house has reached this level. It's the ultimate rarity, with 187 bottles produced, disgorged in March 2021 and of course always without dosage to offer purity and freshness. Hand harvested on October 1, 2004. Vineyard: 2,500 pinot noir vines planted on 30 ares in 1980. Vinification in 20 hl tuns, stirring of the lees, total malolactic fermentation, 2 rackings before unfiltered bottling on May 13, 2005, 16 years on lees before disgorging in March 2021. No dosage, Extra Brut. Production of 187 bottles and 24 magnums.
