Rated 94/100 by our Selection Committee, the 2016 Red Côtes de Bordeaux Castillon is a model of what makes Bordeaux great. The nose opens on aromas of black fruits such as blackberry, plum, and a touch of delicate spices. The palate is splendid, echoing these perfumes in style, with present yet smooth tannins. A remarkable bottle which deserves a light decanting before serving, that will pair beautifully with a piece of beef or a game terrine.Vinification:
Hand harvested. De-stemming, no crushing. Fermentation for 20 days and maceration for 15 days with temperature control at 30° in wooden and concrete vats. Aged on lees for 4 to 6 months, with regular stirring of the lees, 35% in tuns for 12 months, 22.5% in barrels (25% new) for 14 months and the rest in wooden and concrete vats. Wine from Organic Agriculture, certified.Color:

Scents of fresh crushed black fruits mixed with notes of blue plum and blackberry and a touch of wood.Palate:
