The 2019 White Côtes du Roussillon Occultum Lapidem, a blend of Grenache Gris and Vermentino, offers a beautifully crafted expression of the region's schist terroir. Subtle mineral notes intertwine with delicate floral aromas, while the palate delivers a fresh, concentrated profile with a lively energy. Enhanced by hints of dried fruits and a refined texture, this wine impresses with its balance and persistence. Ideal as an aperitif or paired with Mediterranean dishes like anchovy tart or pissaladière.Vinification:
Hand harvested in crates. The whole harvest is pressed. Aged for 9 months, 70% in stainless steel vats and 30% in demi-muids (mostly new).Color:

Delicate aromas of stone fruits, including apricot and peach, complemented by a subtle mineral touch.Palate:
