It opens with refined aromas of ripe fruit and subtle toast, all wrapped in a style of rare elegance. The maturity of old-vine fruit shows clearly on the palate—beautifully balanced, with exquisite freshness and precision. With time, it will only gain depth and presence; give it fifteen years, and it will be even more impressive. There’s no question: this is Provence’s greatest white wine.Vinification:
Manual harvesting, light crushing, pressing and light settling.Aged for 18-months in small oak barrels, including 6-months on fine lees, aged in barrels for one year before bottling.
