Vinification:

Harvested by hand. Fermentation in 3300 l open concrete vats with indigenous yeasts for 3 weeks, followed by 3-week post-fermentation maceration before transferring to barrels for malolactic fermentation. Aged 12 months in French oak barrels, including 8% new barrels, then 12 months in foudres.
Unfined, unfiltered wine.
