Wine:

The 2007 red Castillon Côtes de Bordeaux L’Aurage embodies everything one expects from a great Bordeaux with elegant maturation. The nose is irresistibly seductive, with notes of undergrowth, dried morel, truffle, dark chocolate, and stewed black fruits. The delicate, refined palate, shaped by time, reveals round, mature tannins, perfectly integrated, with a gently spiced finish. A beautiful bottle to pair with a veal chop and seasonal vegetables, for example.

Vinification:

Mechanical harvesting on one day. Total destemming. Aged in barrels for 20 to 22 months.

Aromas of undergrowth, dried morel, truffle mixed with notes of dark chocolate and black fruits.

Palate:

On the palate, this cuvée is smooth and fresh, offering a captivating and complex profile with round, refined tannins. The finish is delicately spiced.
