Wine:

Unctuous, fruity, and inviting, the 2016 Red Esprit de Pavie comes from the estate's young vines on south-facing slopes. With an obvious naturalness of expression and a fresh and well-proportioned palate, it unfolds ripe flavors of fruit associated with a fine, delicate and discreet oakiness. The coated tannins, the polished texture, and the right control make it immediately pleasant. An impeccable and universal style. Rated 91/100 Bettane+Desseauve.

Vinification:

Hand harvested. Alcoholic fermentation in thermo-regulated vats then malolactic fermentation. Aging for 15 months in barrels of a wine from Château Pavie and Château Monbousquet.

Garnet red with purple reflections.

Nose:

Intense and complex with beautiful aromas of black cherry, blackberry and plum underlined by a mentholated touch.

Palate:

Full-bodied and tasty, this wine reveals a bouquet of juicy black berries, fine and round tannins offering a long and balanced structure on a refreshing finish.

Temperature:

Serve at 16 to 18°C.

Food and wine pairing:

Duck breast and spicy juice, braised veal shank and glazed carrots, pan-fried beef ribeye on a sweet potato crush.
