Wine:

The 2022 red Saint-Romain is a refined and elegant wine, with fresh, fruity flavors and a carefully managed vinification that keeps the new oak discreet (no more than 15%). This is a classic example of a juicy Pinot Noir—seductive, well-balanced, and intense. The palate offers notes of licorice and dark fruit, with a silky texture and smooth, fine tannins.

Vinification:

Manual harvesting. 100% of the grapes are destemmed. The maceration process lasts 12 to 15 days with temperature control, daily pumping over and punching down. Pneumatic pressing is used. The wine is then aged for 12 months in oak barrels, of which 15% are new.

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Herb-crusted prime rib, oven-baked lamb shoulder, saffron-flavored veal navarin, roast pigeon with sage crapaudine.

From now until 2029.
