The 2018 white Domaine du Pavillon Beaune 1er cru Clos des Mouches is a wine in a league of its own, already foreshadowing its very high level which, with time, will find a perfect path to fulfillment. The floral aromatic palette, punctuated by toasted-grilled notes and supported by the ageing process, opens the ball in a very vanilla and refined ensemble. The concentrated, ripe palate, sheathed by modern, imposing ageing, traces with authority and amplitude. Its density, volume and generous presence will allow it to go the distance, if you have a little patience, because this wine has the stature. Rated 94/100 by the Committee.Vinification:
Hand-harvested, vinified in oak barrels, 45% of which are new, for 2 weeks to 3 months.Aged in oak barrels, also 25% new, for 12 to 15 months.
