Wine:

The 2022 white Chablis 1er Cru Montée de Tonnerre comes from one of the most prestigious sectors, just below the hill of the Grand Crus, facing Blanchot. It opens with a ripe and fresh nose, showcasing the typical Chablisien shell-like character, complemented by a lovely floral aspect. The restrained oak aging ensures a beautiful freshness, and the structure follows this measured and particularly refined register. The balanced palate displays liveliness and substance, with fine mineral bitterness. A very fine expression of a Chablis Premier Cru, to be aged for 10 years. Rated 93/100 by the Selection Committee.

Vinification:

Harvested by hand. 100% alcoholic and malolactic fermentation in stainless steel tanks. Aged on lees for 10 months.

Beautifully intense gold.

Nose:

Fresh, with very Chablisian shellfish notes and floral fragrances.

Palate:

Fresh and lively with sparkling fruity aromas, this cuvée delivers a well-balanced, consistent juice with fine mineral bitters.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Grilled lobster with tarragon vinaigrette, Arctic char on a fennel emulsion, poultry fillet with lemon beurre blanc.
