Wine:

The Nuits-Saint-Georges 1er Cru Aux Thorey Rouge 2017, derived from 60-year-old vines and vinified with 80% whole clusters, is a profound wine. Its smoky and spicy bouquet leads to an elegant structure with a plush breadth, presenting itself readily yet maintaining a refined posture. Its fine tannins skillfully integrate with the oak, offering a composition that's already quite enjoyable. Rated 93/100 by RVF.

Vinification:

Harvested by hand. 60-year-old vines. Vinification: 80% whole grapes, 20% destemmed, 17-day vatting period, between 5 and 7 cap punchings and pumping over. Pressing, settling for 2 weeks and transfer to barrels. Aged 14 months in barrels (40% new, 60% one- to three-wine barrels). Racking then resting for 3 months in vats before bottling without filtration or fining.

Temperature:

Serve between 14 and 16°C in a large glass.

Game terrine, roast guinea fowl with truffle sauce, tournedos of beef with green pepper, duck aiguillettes with honey, herb-crusted shoulder of lamb, cheeses.
