From 25-year-old vines within the Clos des Santenots monopole, the 2017 Volnay Premier Cru Santenots Red is crafted from fully destemmed grapes and aged in 25% new oak. This micro-selection from just 59 ares within the Clos delivers a captivating wine, both floral and aromatic, with a supple, satin-like structure and vibrant energy. On the palate, it reveals delicate spices and notes of cherries in syrup, offering the elegance and balance of a refined Pinot Noir. This vintage is perfectly ready to enjoy now but will continue to evolve beautifully over the next 5 to 10 years, or longer for enthusiasts. Ideal with veal and sage. Rated 95/100 by the Selection Committee.Vinification:
Hand harvested, total destemming, vatting for 20 days in open wooden vats.Daily punching of the cap, malolactic fermentation carried out in full.
