The 2017 Red Savigny-lès-Beaune Premier Cru Lavières is an elegant Pinot Noir crafted in an infused style, best enjoyed with a touch of aeration to reveal delicate rose petal aromas. The palate is refined yet approachable, with the depth and texture expected of a Premier Cru. Subtle hints of oak provide structure without overshadowing the precise flavours. Ready to drink now, this wine will continue to develop gracefully over the next 3 to 5 years. Vinification:

Hand harvested. Vines around fifty years old. 100% destemmed grapes. Aged in oak barrels, 18% of which are new. Bottled on fruit day in January 2019.

Color:

Medium intensity red with pronounced carmine-garnet notes.

Nose:

A delicate Pinot Noir crafted in a light, infused style, with aromas of rose petals intertwined with subtle hints of bramble.

Palate:

Supported by very fine tannins, this cuvée delivers a refined and approachable Savigny, with the depth and texture of a Premier Cru. Subtle oak enhances its structure, while notes of fresh red berries shine through, offering clarity and balance.

Temperature:

Decant before serving between 14 and 16°C in a large glass.

Food and wine pairing:

Pan-fried foie gras, herb-crusted rib of beef, roast farmhouse guinea fowl, matured Saint-Nectaire cheese.

From now until 2029.
