Wine:

Located at the southernmost tip of the appellation, the 2016 white Rully 1er Cru Les Margotés boasts high finesse and instant charm. Vinified in tuns and barrels, it surprises with its finesse, the lightness of its nose, and the concentration of its structure, which remains fresh, greedy, and appetizing. It's a wine of great substance, extraordinarily sharp and sensual, that's a pleasure to enjoy at the table.

Vinification:

Hand harvested. Plot size 0.40 ha. Whole harvest pressing. Natural gravity settling before transfer to wooden barrels and foudre. Aged 12 to 18 months on lees without stirring. Bottled and rested for 12 months before release.

Certified organic wine.

Temperature:

Serve between 10 and 11°C.

Food and wine pairing:

Shellfish, crayfish, gambas, sole meunière, roast sea bass with beurre blanc, sweetbreads with morel mushrooms, roast poultry, white meats, hard cheeses.

Co-manager of the Domaine de la Romanée-Conti, Aubert de Villaine also owns a magnificent estate on the Côte Chalonnaise. His nephew, Pierre de Benoist, has been managing and vinifying the estate for over twenty years, and is a master at producing Aligoté.
