Wine:

The 2021 Chablis 1er Cru Les Vaillons is a textbook example of Chardonnay from this region. With its chalky, seashell notes and striking mineral tension, it perfectly embodies the limestone soils that define the appellation. The nose is pure, precise, and marked by fresh, classic aromas. The palate follows suit, carefully vinified with minimal oak to allow the floral and fresh flavors to shine. A benchmark Chablis with excellent aging potential. Rated 94/100 by the Selection Committee.

Vinification:

Hand harvested. Slow, moderate-pressure pressing to respect the fruit. Alcoholic fermentation and ageing on fine lees 90% in stainless steel vats and 10% in oak barrels (1 to 5 years old) for 10 months, then in stainless steel vats for 2 months.

Bright, shiny gold.

Nose:

Pure, precise, and wonderfully fresh. Seashell and chalky notes are complemented by vibrant minerality.

Palate:

With crystalline and mineral qualities alongside fresh floral flavors, this beautifully vinified Chablis 1er Cru reveals its full potential, with excellent aging promise.

Temperature:

Serve between 10 and 12°C.

Seafood, shellfish, rabbit terrine, Arctic char on a fennel emulsion, poultry fillet with lemon beurre blanc.
