Wine:
The 2021 White Chablis Grand Cru Valmur shows more depth and structure than usual, thanks to its clay-rich soils. Sourced from two parcels totaling one hectare, these 50-year-old vines produce a Chardonnay of remarkable elegance. Aged with restraint—using less than 5% new oak—it preserves its pure fruit expression while showcasing its bold mineral character and impressive depth. A benchmark Chablis Grand Cru, best enjoyed in three to four years, ideally paired with refined fish dishes.Vinification:
Hand-harvested. 1 ha, 70% facing south-east and 30% north-west, vines with an average age of 62 years. Pneumatic pressing, cold settling and fermentation at around 20°C. Native yeasts. Vinification and ageing 60% in temperature-controlled stainless-steel vats and 40% in barrels (of which 5% are new and the remainder 2, 3 and 4 wines) for 9 months, then blending for 6 months in vats before bottling.Certified organic wine. AB Ecocert certification since the 2013 vintage.
