Wine:

The 2020 red Ajaccio Granit is a masterclass in balance, expertly managing its high alcohol content while maintaining freshness and tension. Made from old vines, this wine elevates the Sciaccarellu grape to a new dimension through extended aging. Sleek and precise, with notes of cherry brandy and almond, it showcases its character in a lightly extracted style, framed by fine tannins that will refine over time. Vinification:

Harvested by hand. Parcel-by-parcel selection of old Sciaccarellu vines. Aged 29 months in foudres, demi-muids and concrete eggs. Production of 8,000 bottles.

Certified organic wine.

Temperature:

Serve between 14 and 16°C in a large glass.

Roast cabbage, lamb chops with thyme flowers, Bigorre black pork chops, baked or grilled beef, ewe's milk or goat's milk cheeses.
