Wine:
From young vines grown on marl soils, the 2022 white Arbois Savagnin Ouillé is fermented and aged in barrels, offering a precise profile with sharp acidity and pronounced salinity. The well-matured harvest reveals aromas of acacia flowers, lemon, and bitter almond. The mouthwatering finish makes it an irresistible match for seafood or fish.Vinification:
Hand harvested. Whole grapes pressed in a pneumatic press. Spontaneous fermentation using indigenous yeasts, followed by 12 months' ageing on fine lees, with topping-up, 70% in 500-liter barrels and 30% in foudres, then 6 months in enamelled steel and stainless steel tanks. Production of 10,000 bottles.Localities: La Vasée, en Longchamps, Sauvagny, la Bouthière (Montigny), la Teppes aux loups (Arbois). Lias marl soils. Vines planted between 2007 and 2019, organically grown and undergoing certification since 2020.
