Driven by a well-defined, subtle, graceful, and aromatic profile, the 2022 Red Arbois Trousseau Vieilles Vignes is a delicate wine. The inclusion of 50% whole clusters adds finesse, highlighting the finely chiseled structure with aromas of black cherry, crushed strawberry, a wonderful minty freshness, and a silky texture. A pure expression of the varietal.Vinification:
Hand harvested in the morning. 50% whole grapes. Spontaneous fermentation in stainless-steel vats using indigenous yeasts, 20-day sulfur-free maceration. Aged for 10 months in stainless steel vats. Production of 3,500 bottles.Localities: North side of Sauvagny and Le Clouzot (Montigny). Jura clay and limestone soils. Vines planted between 1962 and 1970, organically grown and undergoing certification since 2020.
