Wine:

The 2021 white IGP Ile de Beauté Quartz stands out for its complexity, derived from the contribution of old Corsican grape varieties, which add depth and texture while maintaining precision. A blend of four local varieties - carcaghjolu biancu, rimenese, ghjenuvese, and cudiverta - vinified in foudres and demi-muids, it opens with notes of apricot, almond, and fine wood. The palate is voluminous, supported by aging that will mellow with time. A prospective grand Corsican white. Rated 94-96/100 by RVF.

Vinification:

Harvested by hand. Planting of Carcaghjolu Bianco, Ghjenuvese, Cudiverta and Riminese. Vinification and aging for 12 months on lees in foudres, followed by 7 months of mass aging in stainless steel tanks. Production of 3,000 bottles.

Certified organic wine.

Temperature:

Serve between 10 and 12°C in a large glass.

Fine fish, oven-roasted capon of the sea, bouillabaisse, navarin of veal with saffron.
