Wine:

From this perfectly preserved and now mature vintage, the 2014 red Terrasses du Larzac Les Combariolles encapsulates the excellence of its terroir, sourced from meticulously selected limestone gravel plots. Notable for its silky tannins, superb persistence, and overall sensuality, this wine is a true reflection of the year's freshness, with a notable proportion of Syrah (50%) blended with Mourvèdre, Carignan, and Grenache. In Magnum format, it can be enjoyed for another 7 years or more by enthusiasts. Rated 95/100 by Bettane+Desseauve.

Vinification:

Hand harvested. Matured by plot-based wine for 12 months in demi-muids and oval tuns, then blended and aged for a further 7 months in stainless steel vats.

Leg of lamb with pan-fried chanterelles, wild duck with celery and truffles, filet mignon with local ceps, veal confit in goose fat.
