Wine:

The 2022 Red Diabolicôt highlights the intense fruity character of a ripe Touraine, with aromas of blue plum jam. This cuvée is concentrated, fresh, and juicy, featuring fine yet noticeable tannins and subtle oak aging. It pairs perfectly with rich meats like beef stew, shank, civets, or oxtail with caramelized carrots and red wine sauce. Remember, Côt is another name for Malbec, and while it's famous in the southwest, it has long been a favorite in the Loire Valley!

Vinification:

Hand harvested, whole grapes carbonic maceration in foudres, natural alcoholic fermentation with indigenous yeasts for 10 days, aged 8 months in foudres on fine lees.

Certified organic wine.

Glossy purplish-black red.

Nose:

Very intense and fruity, with notes of crushed black fruit and blue plum jam.

Palate:

This wine is concentrated, fresh and juicy, with delicate tannins and a smooth ageing.

Temperature:

Serve between 14 and 16°C.

Food and wine pairing:

Gelatinous meat such as beef stew, shank, civet or oxtail with carrot confit and red wine sauce.

From now until 2028.
