Wine:

With its majestic, refined balance, the 2020 white Vouvray Demi-Sec Le Haut-Lieu is fresh, with pure floral and yellow fruit notes. The barely acidic juice completely disregards sugar, and it's hard to believe this is a semi-dry wine, with barely perceptible sweetness and a dominant minerality. Still extremely dashing and nuanced, stretched by beautiful bitters, it's already proving so delicious!

Vinification:

Hand-harvested, 50% of the grapes are vinified and matured in vats, the other half in demi muids. Aged 6 months.
Residual sugars: 19g/l. Demi-Sec wine.

Bright light gold.

Nose:

Very pure, with a very typical Chenin nose and a lovely freshness with floral and yellow fruit notes.

Palate:

A wine with barely acidic juice, reminiscent of a dry wine, with a dominant minerality and barely perceptible sweetness.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Aperitif, pan-fried foie gras with rhubarb, Asian cuisine, fine apple pie.
