Wine:

The 2021 white Pouilly-Fumé Terres Blanches opens with superb energy, driven by beautiful, stimulating bitters. The pure, fresh citrus nose is punctuated by a hint of minerality, while the palate offers tension, natural acidity, and a smoky, stone-like quality, with a hint of bitterness and a delightful chalky finish. A marvel to be aged for 10 years.

Vinification:

Hand-harvested, fermented with indigenous yeasts and aged in stainless steel vats.

Certified organic and biodynamic wine.

Color:

Bright light gold.

Nose:

Very pure and beautifully fresh, with citrus fruit dominating and a touch of minerality.

Palate:

This wine is well-balanced, with tension, natural acidity and a hint of smoky stone, supported by a hint of bitterness on the finish.

Temperature:

Decant before serving between 10 and 12°C.

Andouillette mâconnaise, barbecued cod papillotes, prawn risotto.
