Wine:

From an ultra-steep, south-facing limestone terroir with 70-year-old vines, the 2022 White Sancerre La Grande Côte delivers a full-bodied, mineral-driven wine, highlighted by the vintage's exceptional ripeness. This Sauvignon boasts impressive structure, combining freshness, tenderness, and finesse with superb complexity, featuring notes of citrus, ripe fruit, and a hint of minty vegetation. A gastronomic white, built for aging, it masterfully balances minerality and completeness, finishing with a remarkably intense chalky finish.

Vinification:

Hand harvested. Gentle pneumatic pressing, settling in vats, 100% indigenous yeasts. Fermented and aged for around 8 months in demi-muids.

Temperature:

Serve between 10 and 12°C in a large glass.

Food and wine pairing:

Fish in sauce or oven-roasted, seafood, prawns or langoustines sautéed with garlic and herbs, mature Chavignol goat's cheese.

Cellar aging:

From now until 2038, and even longer for enthusiasts.

Admirably situated on the steep slopes of Chavignol, Domaine Pascal Cotat is a small 2.5-hectare estate that quietly commands respect with its exceptional wines.

Pascal Cotat focuses on achieving perfect fruit ripeness, crafting two white wines that age beautifully. Sourced from the top terroirs of Sancerre, specifically La Grande Côte and Monts Damnés, these wines are gracefully aged in barrels without any new oak.

Known for its precise style and limited production, the estate excels at showcasing the long-term potential of these exceptional limestone terroirs. These Sancerre gems deserve to be cellared to unlock their full depth and complexity over time.
