Vinification:
Vines planted between 1992 and 1994 at an altitude of between 200 and 350 metres, soil consisting of detrital schist with sandy loam layers. Manual harvesting, indigenous yeasts. Pressing of whole bunches before transfer by gravity into French barrels (4% new). Regular bâtonnage (stirring of the lees), slow malolactic fermentation. Aged on the lees for 16 months in French oak barrels. No new wood. Unfined, unfiltered wine.Biodynamic wine.
