Sourced from vines over 50 years old, rooted in limestone scree slopes, and aged in wood for nearly two years, it offers a powerful, intense structure with firm tannins and notes of dried herbs and bay leaf. Give it another two years to soften, then enjoy it with slow-cooked lamb shoulder.Vinification:
