Clos Cibonne - Côtes de Provence - Cuvée Spéciale des Vignettes - Rosé - 2022

Wine:

Crafted from 90% Tibouren and aged for a year in century-old oak casks, the 2022 Côtes de Provence Cuvée Spéciale des Vignettes Rosé is a truly distinctive cuvée. Its vibrant orange hue leads into a rich, intense profile, where notes of roasted spice and vanilla emerge, layered over floral nuances and hints of candied citrus peel. The aromatic complexity evolves throughout the tasting, revealing a structured and finely textured palate with remarkable presence. A superb rosé, ideal for pairing with bouillabaisse or delicately spiced fish dishes.

Vinification:

Hand-harvested, harvested early in the morning at optimum ripeness, selectively sorted, bunches de-stemmed, pressed directly into stainless steel vats and chilled, fermented for around ten days, aged for at least 12 months in old oak tuns over 100 years old.

Color:

Deep orange.

Nose:

Aromas of very ripe red fruit, intensifying as the wine progresses. Then, hints of roast and vanilla appear.

Palate:

The palate is structured and well-defined, with bold tannins that enhance the spicy flavors.

Temperature:

Serve between 8 and 10°C.

Food and wine pairing:

Ideal with bouillabaisse, fish or world cuisine.
