Vinification:

Harvested by machine early in the morning, part of the wine is vinified as whole grapes, without the addition of yeast. Unfined, unfiltered wine.

Cultivated organically and biodynamically since its founding in 1972, the 26-hectare vineyard is now helmed by Sylvain Hoesch, son of the estate's founder. Continuing his father’s philosophy of minimal intervention, Sylvain combines tradition with modernity. His gentle vinification techniques result in radiant Provençal whites and refreshing reds, enhanced by meticulous aging in amphorae and barrels—a testament to the estate's commitment to excellence.
