Wine:

Blended from Clairette (60%) and Roussanne, the 2022 white Châteauneuf-du-Pape is a superb wine that combines power, depth, and freshness. The perfect management of aging, which enhances the juice with great finesse, releases aniseed and fennel accents, mingling with juicy white fruits. The structure alternates between generosity and tension, offering great dynamism and fabulous balance. A virtuoso white wine, it is worth cellaring, yet already so irresistible…

Vinification:

Harvested by hand. Two parcels of 2 ha. Lieu-dit "Saint-Préfert", terroir of rolled pebbles, blue clay, gravel and sand. Vinified and aged for 6 months in 12-hl oak foudres aged for 2 wines and in glass globes.

The domaine has now created a grand vin de cru called "Famille Isabel Ferrando", the successor to its elder Saint-Préfert blanc.

Domaine certified organic by Demeter in 2013 and certified biodynamic by Demeter in 2021.

Serve between 10 and 12°C in a large glass.

Risotto with shellfish, scrambled egg with truffles, Provençal-style sea bream, pan-fried foie gras with citrus fruit.
