Wine:

The 2023 White Châteauneuf-du-Pape is a classic example of the appellation, showcasing elegant notes of white flowers and a hint of fennel. Anchored by a mineral backbone, this well-balanced white avoids any excess alcohol, delivering remarkable freshness. Subtle bitterness and a rounded, generous texture on the palate complete this refined and approachable wine.

Vinification:

Hand harvested and sorted on the vine. 1.1 ha on sandy-clay terroir, in the localities of La Janasse and La Crau. Pneumatic pressing, vinification in vats for Grenache and Clairette and in barrels for Roussanne. Aged on lees for 7 months in vats for the Grenache and Clairette, and in barrels (3/4 new) with bâtonnage for the Roussanne.

Temperature:

Serve between 10 and 12°C in a large glass.

Food and wine pairing:

Fillet of Saint-Pierre cooked on the skin, salt-crusted sea bass, scallops.

Cellar aging:

From now until 2032.
