Wine:
From 4 hectares of very special soil with a granite subsoil, the 2020 red Le Pavillon Ermitage is a 100% Syrah harvested at the limit of over-ripeness and aged in oak barrels with one-third new wood, offering the quintessence of its terroir. Notes of warm stone, mocha, and black fruits, bonded in an extremely rich texture with ripe tannins, profile a very great wine, an "essence of granite" of superb balance, which is also very intense, deep, and of rare elegance. A great wine of time and emotion, which will outperform its peers and offer superior aging potential. Impressive! Rated 100/100 by Parker.Vinification:
Hand harvested, 100% de-stemmed and vinified in concrete vats, aged from 12 to 18 months in oak barrels, 30% of which are new.Organic and Biodynamic wine, certified by Demeter.
