Wine:

Rated 100/100 by Parker, the 2012 Red Ermitage Pavillon is a phenomenon! Originating from 4 hectares on a very particular soil with a granitic subsoil, this wine is pure Syrah, harvested at the edge of over-ripeness and aged in oak barrels with a third of new wood, offering the quintessence of its terroir. Boasting extraordinary aromas of ripe fruits, incense, smoke, and light leather, it evolves with grace and that sublime concentration that defines this cuvée. A great wine of time and emotion, which will surpass its peers and offer superior aging potential. Impressive!

Vinification:

Hand-harvested, 100% de-stemmed, vinified for 4 to 5 weeks in concrete vats with punching of the cap, only free-run wine is used for this parcel selection, aged 18 to 20 months in oak barrels, 30% of which are new on average.

Organic and Biodynamic wine certified by Ecocert.

Bright, intense red.

Nose:

Aromas of ripe fruit mixed with fragrances of incense, smoke and leather.

Palate:

A phenomenal cuvee, delivering highly concentrated juice, both velvety and well-balanced, with a long finish marked by notes of liquorice and cocoa.

Temperature:

Serve between 16 and 18°C.

Food and wine pairing:

Rib of beef with Bordelaise sauce, venison with Grand Veneur sauce, hare à la Royale or jugged hare.
