Hand-picked from September 10 to 24, 2020. Fermentation in vats, with gentle, balanced extraction thanks to the excellent level of ripeness of the skins and pips. Aged for 18 months in a combination of French oak barrels (90%) and Austrian oak foudres (10%). Very limited production.Certified organic by CCOF and biodynamic by Demeter.
