Wine:

The 741 Late Disgorgement Champagne is one of those great bottles that make an impression at our tastings. It epitomizes the stereotype of great Champagnes: precise, fresh, refined, taut, and persistent. From the moment it's opened, there are notes of dried fruits and roasted hazelnut. The bubbles are remarkably fine and tense. This high-level wine pairs beautifully with a plate of Pata Negra, Parmigiano Reggiano, or salmon roe on toasted country bread with thick cream.

Vinification:

Hand harvested. Based on 2013 vintage and some reserve wines. Aged 94 months on lees, under cork. Production of 14,609 bottles and 759 magnums to be disgorged in April 2022. Dosage: 0 gr/l (Extra Brut).
Pinot Noir from Aÿ and Dizy and Chardonnay from Avize.

Color:

Glistening pale gold.

Nose:

Notes of dried fruit and roasted hazelnut underlined by an extremely complex mineral accent.

Palate:

Remarkable for its finesse and tension on sparkling fruit, this wine delights us with its precise, fresh, racy profile and its remarkably long, delicate persistence. A top-class wine!

Temperature:

Serve between 8 and 10°C.

Food and wine pairing:

Aperitif, plate of Pata Negra, Parmegiano Reggiano, salmon roe on toast and heavy cream, raw and marinated fish, oyster tartar with Aquitaine caviar, seafood, pike with beurre blanc,...

Cellar aging:

From now until 2031, and even longer for enthusiasts.
