Wine:

The 2007 red Pessac-Léognan Château Haut-Bergey has stood the test of time ! Its color is still brilliant, barely tiled, and still looks young after fifteen years of evolution. The nose is of great finess, elegance and purity, with noble aromas of fruit. Silky, mature, this almost twenty year old Graves has retained all its charm and fine tannins.

Vinification:

Hand harvested. Vinification by plot in small thermo-regulated vats. Aged for 16 to 18 months in French oak barrels, 50% of which are new.

Color:

Dark red, slightly tiled reflections.

Nose:

Aromas of plums, slightly kirsch and tobacco box.

Palate:

Round and generous, it reveals a precise palate and a great aromatic purity.

Temperature:

Serve between 16 and 18°C.

Food and wine pairing:

Leg of lamb, rack of veal lacquered with honey and sage, chateaubriand, stuffed quail.

Cellar aging:

From now until 2028.

This pilot property has adopted ambitious and rigorous means of production, crafting well-built and balanced red wines, endowed with great elegance.
