Wine:

With its imposing style that is so linked to this emblematic vintage, the 2010 Red Saint-Emilion Grand Cru Château Pavie is a historical peak. A cult year in the Bordeaux region, 2010 has a nice volume, density and strength. It is a memorable wine, of deep length, with silky tannins. A rich, opulent and sensual wine with notes of black fruits and cedar. A great Pavie wine rated 100/100 by Parker.

Vinification:

Hand harvested. Fermentation of 4 weeks in thermo-regulated wooden vats. Aging from 18 to 32 months in barrels, 80% of which are new wood.

Deep garnet red.

Nose:

Aromas of black fruits mixed with notes of cedar and floral and smoky touches.

Palate:

Rich and opulent, dynamic and sensual, this is a memorable wine, of deep length, refined, with a remarkable silkiness of tannin

Temperature:

Serve between 16 and 18°C.

Food and wine pairing:

Rib of beef with marrow, shoulder of lamb with garlic confit, duck breast with porcini mushrooms and Sarlatan potatoes, roast pigeon with cracked pepper, matured Saint-Nectaire fermier cheese.
