Wine:

Located near Mazis-Chambertin on a north-facing parcel in the Combe de Lavaux, the 2021 Gevrey-Chambertin Premier Cru Fonteny Red showcases exceptional finesse. Its subtle tannins and delicate aromas of bitter orange, morello cherry, and spices are framed by a firm structure, making it a wine with excellent aging potential. Rated 94/100 by Bettane+Desseauve.

Vinification:

Harvested by hand. Area of 0.80 ha, planted in 1970, 1986, 1988, 1989. 100% de-stemmed, vinification in open stainless steel vats. Aged for 14 months in French oak barrels.

Color:

Bright ruby red.

Nose:

Aromas of bitter orange and Morello cherry mixed with spicy notes.

Palate:

Refined and aromatic, with flavors of ripe fruit, this cuvée delivers a wine of remarkable finesse. Subtle tannins and a firm structure suggest it will benefit from further aging in the cellar.

Temperature:

Serve between 14 and 16°C in a large glass.

Roast duck, roast pheasant, partridge gibelotte, flank steak with shallot fondue, fillet of beef with chanterelle mushroom crust.
