The 2021 Chablis 1er Cru Les Vaillons is a textbook example of Chardonnay from this region. Vinification:

Hand harvested. Slow, moderate-pressure pressing to respect the fruit. Alcoholic fermentation and ageing on fine lees 90% in stainless steel vats and 10% in oak barrels (1 to 5 years old) for 10 months, then in stainless steel vats for 2 months.

Color:

Bright, shiny gold.

Nose:

Pure, precise, and wonderfully fresh. Seashell and chalky notes are complemented by vibrant minerality.
