The 2022 white Burgundy Hautes Côtes de Beaune Mainbey reveals the full potential of this appellation! It is a complete success, especially in this beautiful and generous vintage; a complex Chardonnay with floral and citrus notes, perfectly balanced between freshness and generosity, with a dense and expansive structure and great persistence.

Palate:

Delicate yet generous, with crunchy fruit, let yourself be seduced by this wine with its balanced, elegant profile and long finish.

Bouchée à la Reine, fillet of pike-perch with beurre blanc, Arctic char, hard cheeses like Comté or soft cheeses like Reblochon.

Since 2010, Chanterêves has been the home of two talents, Tomoko Kuriyama and Guillaume Bott. Tomoko honed her skills in Germany's Rheingau region with renowned winemakers like Peter Jakob Kühn and Georg Breuer. Guillaume gained experience at Domaine Simon Bize in Savigny-Les-Beaune and then at Etienne Sauzet in Puligny-Montrachet.

After these valuable experiences, the couple combined their strengths and sensibilities to create their own wines, producing cuvées that are precise, delicate, and moving.

Practicing organic farming, whole-cluster fermentation for reds, no filtration, gentle vinification, indigenous yeasts, minimal sulfur, and aging without new oak... all the hallmarks of excellence are in place. Their micro-production quickly found a dedicated following.
