Wine:
A typical Pinot, with notes of warm cherry, cherry syrup, and strawberry jam, the 2021 red Chevalier d'Eon Pinot Noir Burgundy reveals a beautiful balance, a slightly acidic, ripe, delicate, and light structure. A wine to be crunched over the next 2 years to fully appreciate, with a sober aging process particularly suited to it.Vinification:
Hand harvested. Alcoholic and malolactic fermentation: 40% in oak barrels and 60% in stainless steel tanks. Aged on fine lees for around 18 months.Color:

Complex and fruity, the nose reveals intense, ripe red fruit aromas, underlined by a light smoky touch.Palate:
The silky, velvety attack delivers beautifully supple tannins, with controlled acidity balancing the whole on a fresh, gourmet finish.
