Wine:
Rooted in the limestone soils of the Chablis region, and benefiting from the best exposure, the 2022 red Chevalier d'Eon Burgundy delivers a ripe, fresh pinot, between morello cherry and cherry, soberly aged. Neither lacking in consistency nor generosity in this opulent vintage, it is full-bodied, fleshy and stylish, with great finesse and, above all, freshness at all times. Drink over 2 years, decanting beforehand.Vinification:
Hand-harvested, 40% alcoholic and malolactic fermentation in oak barrels and 60% in stainless steel vats, aged on fine lees for around 20 months.Color:
Bright, intense red.Nose:
Ripe and fresh, with aromas oscillating between cherry and morello cherry.Palate:
Generous and full-bodied with fresh flavors of fruit, this cuvée has a lot of class and richness.
