Wine:

With its always inimitable Chablis style, the 2023 white Chardonnay Côtes Salines Burgundy opens with shell-like notes and a lot of freshness. It is, of course, a very young wine, a 2023 with marked vivacity that would benefit from an additional 5 to 6 months in the bottle to fully unfold. Yet, it already meets our expectations: fresh, crisp, and precise. Rated 92-93/100 by the Committee.

Vinification:

Mechanical harvesting, direct pressing, natural yeasts, fermentation in temperature-controlled stainless steel vats at 16-18°C.
Total alcoholic and malolactic fermentation, aged on fine lees for 5 to 6 months in stainless steel tanks, fining and filtration before bottling.

Bright pale yellow.

Nose:

Fresh and very typical of Chablis, marked by shellfish and floral notes.

Palate:

Pure and fresh with crisp, vibrant flavours, this youthful cuvée impresses with its precision and unmistakable Chablis character—an irresistible choice for lovers of the region.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Aperitifs, cheese gougères, seafood, shellfish, smoked marinated fish, sea bream ceviche, cheese dishes, cheeses such as Époisses and Langres.

Cellar aging:

From now until 2027, and even longer for enthusiasts.
